How to Grill Fish Filets

When I first got into grilling I always used a charcoal grill and the last thing in the world that I would choose to cook would be fish filets. I guess one reason quite simply was that fish wasn't really my favorite but more significantly it always seemed like a waste of charcoal. In other words why spend 45 minutes preparing a fire to grill fish filets for about 10 minutes and find most of the fish landing in the charcoal as it breaks up!
“Wrap it in foil” I hear you say! And to some extent I agree with you. Take a piece of salmon, place it on some foil and season it. To keep it simple just lay a slice of lemon on the skin with a nob of butter, seal up the parcel and grill for about 10 of 15 minutes. Open it up and you have a lovely piece of succulent salmon cooked in its own lemon butter sauce. But still there's something missing, especially with a charcoal grill, and that's the sizzle and a bit of smoke. You see, that salmon parcel could have been cooked just as well in the oven.
Don't underestimate the amount of flavor you can put into fish with a little bit of smoke. Take some fruit wood chips (apple or lemon are my favorites) and soak them in water for 30 minutes until they've clearly absorbed some of the moisture. When you are ready to cook and your grill is up to temperature, wrap the wood chips in foil, make some puncture holes in the foil and throw the parcel onto the coals. The most wonderful aromas will start to permeate the atmosphere once the wood start to char.
By definition if you're going to get flavor into your fish from smoke then there's not point wrapping it in foil, but if you don't wrap it in foil then it's going to break up right?.......Wrong! There's a number of techniques and tools that you can use to keep your fish in one piece......
Firstly, fish just need simple cooking and you can tell when it's cooked because the color changes from one which is translucent to one that is much more firm. You can tell when fish is cooked just by looking at it carefully and certainly there's no need to keep flipping it. Grill your filet on one side and then finish on the other and leave it at that, excessive turning will for sure cause your fish to break up.
Use a Teflon mat. Arguably you can just coat your grill plates with olive oil but I find that a Teflon mat (also coated with olive oil) really stops the fish from sticking. The Teflon mat's other advantage is that it's woven loosely so there's plenty of holes to let the smoke through but most importantly there's a good amount of surface to spread the weight of the fish filet over giving the filet nice support throughout the cooking.
Lastly, cook your filet with the skin on. I had a discussion with a colleague whether to cook skin side down first or skin side up and my preference is skin side down for two reasons.
1. Should your fire be a little vicious, the skin will burn / crisp but the fish will be protected.
2. You can watch the fish change color and so see when it's starting to cook through.
3. The best way to tell when fish is done is to pull back the skin. If you do skin side up second then the skin is accessible to do this test.
So cooking fish filets without foil is possible and to my mind it's also preferable. In addition to the flavor that you can get from adding wood chips to your fire, try also wrapping your fish in a cured meat like streaky bacon or chorizo, I can assure you that you won't be disappointed in the results.

Prep Sportscasting 101 - Stage Left

Why does high school or prep sport video coverage need to be schlocky? Yea, that’s a real word and it refers to all those jumpy, loud, dizzying video captures you typically see for prep sport footage. We think there are some freaks in the Prep Sport community who might have talent. Some Sports Casting talent and we want to see it. So do your viewers. Let’s see how we can kick it up a notch with a little “personality” in front of the screen.
Before we start, let’s contrast how different sportscasting can be…even at the pro level. I love DirecTV. I can watch my local NBA team on the big networks and another game on the local network. Wow…what a difference in the sportscasting talent. The big networks sportscasters actually have something to say. For the local guys, you’re pounded over the head with lots of insight like “You got to put the ball in the hoop to make points”. Really?? It’s painful so we DON’T want to go that way when we’re sportscasting Prep Sport.
First, start with the best footage whether you’re in it or now. We have lots of tips on what to avoid and what to concentrate on when capturing Prep Sport video action. If the video is jumping around or being blocked…it’s painful to watch. Let’s not set off a wave of vomiting from too much motion. Audio’s a big deal. It can kill your footage. If the crowd’s too loud or wind is hitting the mic, that’s a problem. The first decision is whether you want to be in front of the camera or run voice overs later on in the edit bay. By edit bay, I mean that piece of shareware you use to modify your videos. It’s not bad to run voice overs across video footage. You have much more control and ultimately, people want to see the huge catch or monster dunk. Your head in the way probably doesn’t help much.
The edit bay is where you can strip, enhance, and clean up both the video and audio. Really, most of the work is done there…not on the front end. If you have someone with some real flair in front of the camera, then by all means. We’re amazed almost daily how creative members of the Prep Sport community can be. Some of the members in front of the camera are funny. Others are serious but with a sense of style. Some are so bad that it becomes good. That all works and you’ll know if it’s working by how many people view it or rate it up. Some of the most popular footage ranks well only because of the Prep Sportscaster in front of the camera or the voice over commentary. Get creative and fun but make sure to stay withing our Community Playbook rules for language and content. The truly gifted shouldn’t have a problem there.
We’ve even seen some footage in the network where high school kids made a make shift sportscasting stage. Yea, it had a little of Waynes World in it but ultimately, they were funny and ran pretty good game. It ranked well on pretty average actual prep sport video action. So let’s see what you and your friends can come up with . 3…2…1.. and YOU’RE LIVE.

Making The Move From Project Doer To Project management

So you are good at your job friv4school and you want to move up within your organization. You see what the project managers at your company do and you know you can do it better. Maybe it’s time for you to take the next step and move from project doer to project manager. First, ask yourself a couple of questions. Are you a planner and organizer? Are you great with people and love to be a supervisor? Can you handle the stress of being responsible for the success or failure of a project? If you can honestly answer yes to all these questions, then maybe you are right. You should be working as a project manager.

The project management field in general is showing incredible growth right now. As companies continue to look for ways to cut costs and retain their profitability, they also look for people with top notch project management skills who can implement measures designed to streamline the company and keep projects on track. Plus, successful project managers are often plucked from projects and put on the fast track to company management. So how do you get such a great position?

Let’s assume you have already developed some marketable skills in some sort of specialty area friv4school. Maybe you are in IT or construction. Perhaps you are working in engineering or in the healthcare field. How quickly you can move to a top job in project management position will depend on how many layers of management your company has and how much experience you have. You should be open to accepting a lateral move or a move to an assistant project manager or project coordinator role in order to get started. This is give you a chance to learn the ins and outs of what a real project manager does and get your feet wet. As you become recognized for your project management skills, you can begin to assume more responsibility and in no time you’ll be ready to move into an actual project management position.

There are some things that you can do to help improve your chances of getting a project management job friv for school. There are many formal educational programs that offer certifications in a variety of project management disciplines. Many of these programs are designed for working professionals who need to take their coursework at night. With a little research you will find programs designed specifically for you industry. If you are interested in the international aspects of project management, there are certifications you can earn for this as well. Trade groups and industry associations can be a particularly good source of information on how to make yourself more marketable as a project manager. Chances are your industry has its own special group dedicated to project management.
